In this class, we’ll teach you all about BEHTV, which is a short acronym to remember all of your basic sauces, which include: Bechamel, Espagnole, Hollandaise, Tomato and Veloute
We’ll teach you not only how to create these classics, but how to add other ingredients to invent new sauces, known as derivatives.
Examples of derivatives to be explored include; marinara and puttanesca based on tomato sauce; mushroom supreme from velouté; green peppercorn and cognac sauce based on an espagnole; and more.
