In this class we travel back in time to Ancient Greece and Japan where some of the greatest accidents in history took place. We will be discussing molds, bacteria, salinity and the ability to break down proteins into amino acids and creating that all mighty umami. We will create such sauces as soy sauce, fish sauce and miso.
